On my first attempt, I left out one very important ingredient - SUGAR - can you believe that??? Even diabetics know that some sort of sweetner is required for a cake. I only discovered this when I failed to fill 24 muffin cases to "slightly more than halfway full" - naturally, I was short of two cups of baking ingredients!!! What I did next, will definitely have you holding your sides with laughter - I shall be e-mailing you my story, suffice to say, the botched up batch are in a packet in my freezer, waiting to be used as filling for my next dessert, like trifle for instance.
